Last year we said goodbye to the West Coast of Canada and moved from Vancouver to Calgary. The thing I miss most about living there is the proximity to Seattle, Washington. Just a hop, skip and a 2 hour drive away, we could eat vegan donuts at Mighty O, enjoy climbing up hill to have food at the always-delicious Plum Bistro, and escape for a few days. During our most recent trip to Seattle (in late August), we discovered the best (vegan)Thai food restaurant outside of Thailand, toured the Boeing Factory, and visited Seattle Center.
During the first few days of 2011, Greg and I were in Honduras with his family. I enjoyed the warm water of the tropics—and look forward to swimming in the Caribbean again. Prior to Honduras, Greg and I stopped in Guatemala:
During September, Greg and I travelled to the 4 corners of the USA, and fell in love with West Texas.
We loved many parts of Texas—especially Fredericksburg, which is a little German town in Central Texas. We had just visited my dad in Midland, which was another place we really enjoyed. What I loved most about that part of our trip was the amount of sunshine, delicious food and the dryness. . .but then, we were coming from over-saturated Vancouver!
We also visited New York for the first time, but despite it being the main reason why we were on the USA trip, it wasn’t my favourite place out of the ones we visited.
In 2012, I hope we’ll spend a fair amount of time in the Canadian Rockies, which I have been missing since we moved to Vancouver. Also, we’ll be going to a conference in Colorado during June.
