Benjamin Franklin stated that, “Among the numerous luxuries of the table…coffee may be considered as one of the most valuable. It excites cheerfulness without intoxication; and the pleasing flow of spirits which it occasions…is never followed by sadness, languor or debility.”

A good cup of coffee (preferably an Americano) does much to cheer me. I am always on the lookout for the next great local coffee shop. The shop that I happened upon whilst out shopping with Greg was not only a local coffee shop, but part of a (small) chain of shops, backed by a coffee roaster in the city. Being from Vancouver, I’m used to amazing coffee shops on every corner—ones that can easily compete with big coffee shop mega-chains. In Calgary, though—Phil and Sebastian is definitely my favourite.

I was happy to see our espresso machine (Rancilio Silvia) being sold at the Chinook Centre location, and that they had a variety of Reg Barber tampers. . .the same brand that we have at home. Clearly, we’ve been doing something right! It is great to have a place to stop for a great coffee, especially whilst wandering around a huge mall.

Greg and I were looking for some work pants at Chinook Centre (an absolutely massive mall in Calgary) for my new job. We wanted a break and really enjoyed relaxing for a while inside the Phil and Sebastian coffee shop. There were lots of places to sit, and a huge set of windows to look outside (onto a parking lot. . . but still). I really liked the ambiance of the coffee shop—industrial and vintage-y at the same time.

I had an americano, which was unfortunately not perfect—it was supposed to be a small, but had too much water in it. Luckily, the Equal Sweetener they had made my drink taste a lot better. When I ordered my drink, I asked if they had Equal as a sweetener choice. Luckily, they did, so I didn’t need to fill out a comment form. I liked the selection of sweeteners and milks, creams etc. at this store.
