Vegan Aaloo Bhaji Recipe
A delicious potato-based Indian meal for the whole family!
- 5-6 Medium potatoes peeled and cut in to thin half or quarter round slices
- 1 Medium tomato finely diced
- 3 green chillies sliced or chopped
- 1 Small handful coarsely chopped cilantro
- 1 Shan Aaloo Bhaji Mix
- 8 cups water
In a large pot, add potatoes, tomato, and Shan Aaloo Bhaji Mix in 8 cups of water.
Boil on medium heat until potatoes are tender, stirring occasionally. If you want a thicker curry, mash up some of the potatoes.
When the potatoes are tender, add in green chillies and fresh cilantro before removing from heat.
Stir curry and serve warm with naan, rice, roti, or paratha.
