  • 5-6 Medium potatoes peeled and cut in to thin half or quarter round slices
  • 1 Medium tomato finely diced
  • 3 green chillies sliced or chopped
  • 1 Small handful coarsely chopped cilantro
  • 1 Shan Aaloo Bhaji Mix
  • 8 cups water


  • In a large pot, add potatoes, tomato, and Shan Aaloo Bhaji Mix in 8 cups of water.
  • Boil on medium heat until potatoes are tender, stirring occasionally. If you want a thicker curry, mash up some of the potatoes.
  • When the potatoes are tender, add in green chillies and fresh cilantro before removing from heat.
  • Stir curry and serve warm with naan, rice, roti, or paratha.
