Blueberry Smoothie with Coconut Milk Yogurt

Quick food most often means unhealthy food. At least, that’s the misconception I often hear.

As someone who rarely puts together a full breakfast, since I’m generally rushing to get to work or an appointment, smoothies have made all the difference in morning routine.

I love how portable, customizable, refreshing, and filling smoothies are. Since I really like starting my days with pieces of fruit, I tend to make fruit smoothies.

These days, I’ve been choosing to include lots of BC blueberries in my smoothies. Since blueberries are Blueberries are full of antioxidants, are high in vitamins C, A and E, and dietary fibre, plus if you eat 1 cup a day you can prevent and treat diabetes, heart disease, stroke, Alzheimer’s and Parkinson’s disease.

Lucky for me, I have lots of blueberries in my freezer and fridge, thanks to a trip I recently made to Didar Berry Farm in Delta. Myself, other South Asian Bloggers and our families picked berries at a local u-pick. My friend Alex and I came away with buckets of blueberries!

Here’s one of the recipes I often use in the morning to put together a smoothie:

Blueberry Smoothie with Coconut Milk Yogurt

I love how portable, customizable, refreshing, and filling smoothies are. Since I really like starting my days with pieces of fruit, I tend to make fruit smoothies.

Ingredients

  • 1 cup blueberries fresh or frozen
  • 1 cup coconut milk yogurt or other yogurt of your choosing
  • ½ cup soy milk or coconut milk or almond milk
  • 1 handful strawberries or cherries

Instructions

  • add all ingredients to a blender
  • blend until liquified
  • if you prefer a more thick smoothie, use less soy milk

This smoothie is sure to be a hit first thing in the morning or as an afternoon snack that you can grab and go. I blend 2 or 3 portions of this smoothie and keep them in the fridge in mason jars. This way they’re ready in the morning without me needing to make the recipe from scratch everyday.
