I like making this creamy dressing during spring and summer, when you can easily get local lettuce, cucumbers and carrots. It works well as a salad dressing, but also as a vegetable dip. I’ve actually used it to drizzle over baked tofu a few times, too. This recipe is really easy to put together, and can be kept for 2 or 3 days.
What is tahini, and where do I find it? Tahini (amazon link) is sesame-seed paste, which can be used in hummus or baba ghanoush, amongst other things. It is delicious when used in falafels. Here, I’ve used it to create a creamy dressing/dip. This dressing is really fresh-tasting, so I tend to make it in the warmer months of the year. I like to serve it at BBQs, small gatherings, and spring parties. It’s a nice alternative to ranch dressing, or other store-bought salad dressing.
