Quick Fresh Vegan Avocado Salad Dressing

When it gets really hot outside and you would rather not turn on your stove or oven to cook, a big salad is here to rescue you! I enjoy topping my salad with homemade salad dressing using avocado and just a few other ingredients.

I can create an Avocado Salad Dressing in mere minutes and it keeps for 3-5 days in the fridge to dress salads throughout the week.

Avocado Salad Dressing

Ingredients

  • 1 medium avocado
  • 1/3 cup water
  • 2 tablespoons olive oil or grapeseed oil
  • 2 tablespoon lime juice
  • salt to taste

Instructions

  • Cut and scoop out avocado into a small bowl
  • Add water, oil, and lime juice
  • Whisk together
  • Add salt to taste

I find it relaxing to chop vegetables and arrange them on my plate or bowl prior to pouring salad dressing on top. But, pre-chopping and storing your favourite vegetables can make the salad-prep job go a lot faster. One trick I’ve recently learnt is that cooking throughout the week can be a lot less time consuming if the week’s vegetables are chopped up in one go.

One trick I’ve recently learnt is that cooking throughout the week can be a lot less time consuming if the week’s vegetables are chopped up in one go. I’ve been using my new Microplane Veggie Wedgie to easily slice hard vegetables, like carrots, cucumbers, and zucchini.

Having a container filled with sliced veggies makes it easy for me to snack responsibly. If I’m feeling the munchies come on I just open my fridge and grab a small handful of sliced veggies (and sometimes a bit of avocado dressing to use as a dip). When I next need to put together a veggie platter for guests, I’ll be sure to use my Veggie Wedgie so the task is a lot easier!

Avocado Salad Dressing

For more thinly sliced vegetables, I use the Microplane Gourmet Series 2mm Slicer with Food Holder, which is a tool that allows me to cut paper-thin veggies like carrots, celery, potatoes, and many others. The food guard allows me to hold my food in place while protecting my hands from the sharp blade. It’s really easy to use this product inside of a bowl or on top of a cutting board. Cleaning it is just as easy – the main device is dishwasher safe!
