Vegan Tofu Biryani Recipe
- 3 ½ cups basmati rice
- 2 Medium onions (finely sliced)
- 2 Medium bell peppers (sliced)
- 2 cubes firm tofu packages (drained and cubed)
- 1 cup soy or other yogurt
- 4 tablespoons ginger garlic paste
- 1 cup cooking oil
- 1 packet Shan Special Bombay Biryani Mix
|Fry onions in hot oil until golden brown. Add bell peppers and fry until oil separates.|
|Add tofu, ginger garlic paste, yogurt, and Shan Special Bombay Biryani Mix. Stir fry for 10 minutes. Add 2 cups of water and cook on low heat until tofu is tender. Increase heat and stir fry until oil separates from the gravy.|
|Separately, cook rice until 3/4 cooked. Drain rice.|
|Spread half of the rice in pot and pour tofu curry on top. Cover with the remaining rice. Cover pot and cook on low heat until rice is fully cooked (5 - 10 minutes). Mix before serving.|
