Feeling disappointed with the “fake” taste of store-bought strawberry ice cream, I knew I needed my first batch of homemade ice cream in my new Cuisinart Ice Cream Maker had to be strawberry-licious! I took my time sourcing the PERFECT looking vegan strawberry ice cream recipe, until I found the one that I ended up using. This recipe involves a bit of stove-time, which made my apartment even more hot—but in the end I had a sweet and cool treat to make up for it!
Strawberries are my favourite thing about early summer—I love when even the organic ones are really cheap. There are also local strawberries available from the nearby farms around Vancouver, and pick-your-own places, too.

I used the recipe for strawberry ice cream found on The Kitchn but substituted vanilla bean powder for a real vanilla bean, and I used 2.5 cups of strawberries to intensify the strawberry flavour. I used my Cuisinart Ice Cream Maker for this recipe. Because of the wait-time between steps, I put the coconut mixture in the fridge overnight, and it all worked out pretty well.
